The Spirit - Medium Roast Whole Bean Coffee

This is a medium roast whole bean single origin from Nariño, Colombia, grown high in the Andes where the altitude pushes the plant to work harder and the volcanic soil lays down its own foundation in every cup. Fully washed, which means nothing is hidden. What you taste is exactly what is there. No process layering, no borrowed sweetness. Just the bean. Just what it is at its core. 

This is not a cup that tries to charm you. It earns you. It asks you to slow down, to pay attention, to sit with something that has depth and doesn't rush to reveal it. The first sip is one thing. The finish is another. What lingers is the part that matters. 

As a pour over or drip, The Spirit opens slowly, the tamarind brightness leads and the molasses warmth follows. In a French press, it turns fuller, darker, the chocolate notes thickening into something that feels almost like a memory. However you brew it, it rewards patience.
